As long as humor (& truth) is still allowed here  .... in the deep South catfish are also known as (among fisher-folk) 'turd-hustlers' !

That would be the Flathead or Mudcats.

Carp and Suckers have the same nickname here in WV.

I don't like the taste of a Mudcat and Suckers are good tasting but have far too many bones throughout their flesh to be picking out before ya can eat it. My neighbor said he solved that too-many-bones problem by putting them thru the sausage grinder and making "fish patties" for frying.

The Channel catfish is the super good tasting one ..... and it prefers live bait. They are the ones that are "farm raised" and ya buy at the Supermarkets.
