Being in Texas and in cattle country, Besides having run a few head myself I am pretty familiar with cattle in general !!  You will find that in England many are represented in a similar way !!  Don`t know why but livestock are frequently drawn with small heads !!  Have particularly noticed in horses which may be because the refined head indicated good breeding !!

Mart is correct, ...... but also in America.

Now I do not know why …… but 18th and 19th Century “primitive” and/or ”folk art” paintings of cattle were notorious for having small heads in comparison to extreme body size, like so:

Just do a Google "image search" for ...... 'primitive paintings'

Mart, the 17th thru the 19th Century was a time when affluent farmers and land barons were greatly concerned with having “bragging rights” for the superb livestock (horses, cattle and sheep) that they bred, bought and/or owned, ..... and the fact that photography had not been invented yet, …… they commissioned artists to paint pictures of their favorite animals as “proof” that they owned the finest to be had.

Like these 2 primitives, to wit:

This may be a long stretch, but it is all I could find.  There is a Mark Rossi who know specializes in animal sculptures.  But he started art at a very early age since both parents were formalized in the fine arts.  Perhaps he drew before he sculpted...it's worth a try:
