any advice on how to find the old privy around our 150+ year old house?

In 150 years ........ it was most probably moved several times. ;D ;D ;D

But usually not very far away from a back door.

Unless it was built over a ditch where rainwater run-off would keep it cleaned out.

Check on prevailing wind direction for the area, leveled edge of a berm of sorts  or ridge for run-off and geanerally no more that 40 to 50 yards from the home. The waste was probably used for fertilizer 150 years ago.
